Dubai’s culinary scene has reached new heights with the debut of FZN Atlantis, an intimate fine-dining concept from the globally acclaimed chef Björn Frantzén. Officially opened on November 8 at Atlantis The Palm, this 27-seat restaurant is a destination where modern European cuisine meets Japanese influences, creating a culinary experience that’s both sophisticated and immersive. 


As the first Middle Eastern venture for the celebrated chef behind the three-Michelin-starred Frantzén restaurant in Stockholm and Zén in Singapore, FZN Dubai menu sets the bar for the city’s fine-dining landscape, seamlessly combining innovation, elegance, and impeccable craftsmanship.

Diners have the option to sit at the 13-seat open kitchen, where they can witness the meticulous preparation of each dish, or at one of the intimate tables designed to foster connection and conversation. Every detail, from the presentation of the food to the selection of music curated by Chef Björn Frantzén himself, has been thoughtfully designed to create an atmosphere that is as memorable as the cuisine.

Entering FZN Dubai is akin to stepping into a meticulously curated culinary theatre. Guests begin their journey in a chic, art-filled living room, where they’re greeted with canapés. 
 
From there, they’re guided through a thoughtful exploration of the restaurant, culminating in a choice of seating at the 13-seat open kitchen or one of four exclusive tables accommodating up to 14 guests.

At FZN restaurant, every detail has been carefully considered to ensure an unparalleled experience. The nine-course tasting menu, priced at AED 2,000 per person, showcases a masterful blend of flavours, textures, and techniques. Highlights include: 

  •  Duck BBQ with yuzu, Kampot pepper, and foie gras. 

  • Chawanmushi elevated with smoked beef broth and luxurious caviar. 

  • Turbot paired with Cecina de wagyu for a symphony of taste and indulgence.

To complement the dining experience, FZN Dubai offers an impressive selection of 1,300 wine labels, thoughtfully curated to pair with Chef Björn Frantzén’s innovative dishes. Guests can either explore the wine cellar themselves or choose from the restaurant’s pairing options:

  • Sommelier Wine Pairing: AED 1,400
  • Alcoholic & Non-Alcoholic Pairing: AED 1,100
  • Non-Alcoholic Pairing: AED 750.

Reservations opened for a limited audience

Given its intimate and exclusive nature, securing a coveted seat at FZN restaurant Dubai is an experience in itself, reserved for those with a discerning palate and a keen sense of anticipation. To ensure every guest enjoys the unparalleled luxury and attention to detail that FZN Atlantis is known for, reservations are released on a rolling basis, with new openings available on the first day of each month at 10am.

The restaurant welcomes diners from Tuesday to Saturday, with its doors opening at 7pm for an evening of culinary artistry. To maintain the exclusivity and immersive atmosphere, the final seating is scheduled at 8:15pm, allowing every guest ample time to savour the nine-course tasting menu and its exquisite wine pairings.
