Born and raised in the south of France, Chef Cyril Calmet left his hometown at the age of 21 for Chicago (USA) where he lived for six years. He continued around the world, moving to Abu Dhabi, Bangkok, Jakarta, and China before heading back to the Middle East to take up the position at Atlantis The Royal.

“After my conversation with Cedric [Darthial] and Mathew [Goodlet], the decision to move here was made without any hesitation. Having the chance to join this iconic pre-opening at Atlantis The Royal, backed by leaders such as Mathew, Cedric and Kym [Barter], was an easy decision to make. The success of the highly publicised Feast of Dreams was without a doubt the incredible team, as well as the planning that took place behind the scenes. We had the opportunity to gather together the celebrity chefs for this fantastic night at Gastronomy, including our team from Atlantis, The Palm. It was a spectacular opening that required so much from all of us. If I could describe the feeling of being part of the team behind the Grand Reveal of Atlantis The Royal, it would be ‘humbled, proud, lucky and grateful’.

I love being part of this unique industry and having the chance to meet and work with Colleagues from different parts of the world. It is an enjoyable learning and life experience. To be honest, I always pictured myself as a hotel general manager, but I am absolutely loving being Executive Chef at ATR. There is not a single day that I’m not filled with excitement to come into work. Growing up, I had the choice between culinary school or starting the journey to become a professional soccer player. My dad was disappointed with my choice to attend culinary school, but he has now embraced it because I always cook for him whenever we spend time together. To other aspiring chefs I say, it takes immense passion, discipline and commitment. To be part of this world, you must have true passion for the art of cooking and be open to constantly learning.”
