TREAT YOURSELF TO BOLD SOUTHWESTERN
STYLE CUISINE

Elegant Southwestern cuisine lands on Paradise Island in the form of award-winning chef, television personality, cookbook author and restaurateur Bobby Flay’s nationally-acclaimed Mesa Grill. In a space designed by famed interior architect, David Rockwell, that incorporates a variety of materials including sea shell and copper signature accents of The Cove; highlighted by beach and Atlantic ocean. Flay has created a menu of bold and innovative dishes only available to Atlantis resort guests—including Bahamian Spiced Chicken Skewers with Yogurt Cilantro Sauce, Crispy Squid and Cracked Conch Salad with Orange-Chipotle Vinaigrette, tongue-tingling Bahamian Lobster Tail with Red Chile-Coconut Sauce and Green Chile Rice, his take on Black Eyed Peas and Rice; and so much more.

CHEF BOBBY FLAY

Bobby Flay's culinary boldness and versatility is evident in the multiple talents he brings adds to Atlantis Paradise Island's epicurean delights: As a critically-acclaimed chef and restaurateur, award-winning cookbook author and television personality. However his first priority always remains with his restaurants. Flay discovered his culinary identity at the age of 17, while working as a cook at the famed theatre district haunt, Joe Allen's. This eventually led Flay to study at The French Culinary Institute where he earned the first "Outstanding Graduate Award" in 1993. He now serves there as Master Instructor. Flay possesses a remarkable ability to create and retain the individual character of each of his projects, insisting on uniqueness and integrity. He works tirelessly to challenge diner's expectations and influence the way Americans view and taste food – by making it bold, zesty and always fun.
